Calabrian Flavours Fill the Rooms of Speciality & Fine Food Fair in London

The delegation of local businesses organised by Regione Calabria has filled the rooms of Speciality & Fine Food Fair 2018 with the tasty flavours of their indigenous delicacies.

The exhibition by Regione Calabria lifted the veil on the immense variety of the local gastronomic production, from nibbles to treats, through more traditional staples like pasta, sauces and the beloved nduja.
The dedicated cooking demo station attracted a large crowd of visitors and exhibitors alike over the course of the three-day fair, curious to learn the secrets of the popular Mediterranean Diet behind Calabrian people's above-average longevity.
On the first day, a trio of renowned culinary ambassadors composed by London-based celebrity chef Francesco Mazzei, TV and radio personality Federico Quaranta and regional chef Antonio Callipari engaged the Fair's patrons with a lively show, where they served hot-off-the-stove fresh cavatelli with broccoli and stockfish, and braised pork cheekbone to a hungry and admiring crowd.
In the afternoon, chef Antonio Callipari introduced a regional spin to the most famous British street food, the fish and chips.
Antonio Callipari's personal interpretation of this traditional signature dish laid entirely on typical Calabrian ingredients: tempura-fried Mediterranean stockfish with mashed PGI Sila potatoes and PGI Tropea red onions, served with a cloud of Sibari rice cracker.
Other regional dishes prepared by chef Antonio Callipari include:
- fresh fileja pasta with ricotta cheese, spicy nduja and anchovies;
- Calabrian risotto with Sibari rice, PDO Sila caciocavallo cheese, PGI Sila potatoes, pork cheekbone topped with breadcrumbs toasted in basil sauce;
- fresh maccheroni al ferretto pasta with stockfish, pancetta on a bed of pumpkin and fennel purée, topped with PDO Sila caciocavallo cheese.
